Chocolate Brownie Muffins

Brownies were one of the first things I made as a home baker and I love them in their purest form - chocolate on chocolate! The edge pieces from the brownie tin are always my favourites because of that added crunch, These muffins are crunchy all around, gooey and moist in the middle too.
- 350g caster sugar
- 80 cocoa powder + extra to serve
- 150g plain flour
- 1 tsp baking powder
- 3 eggs
- 200g unsalted butter, melted
- 2tsp vanilla extract
- 125g dark chocolate chips, or dark chocolate, roughly chopped
Preheat oven to 160°C. Line a 12 capacity muffin tin with baking paper squares or muffin cases.
Mix the sugar, flour and baking and cocoa powders in a bowl. Add the eggs, butter and vanilla until combined, then stir in the chocolate chunks. Fill each muffin hole until about 3/4 of the way full, and bake for 40 minutes.
Leave the muffins to cool slightly in the tin, then place onto a wire rack to cool completely. Dust with icing sugar or cocoa powder if you wish and enjoy.
